🥐 Starting a Street Food Stall in Paris: What's Real, What's Made Up

Stories circulate about pitches being awarded by "bidding," and about specific stalls making a certain amount of money. We checked. Some of it's true, and some of it doesn't exist anywhere. Here's what's real, and what's simply never published.

"Street vending" is not one thing

People lump every kind of Paris street vending together, but the City of Paris actually splits it into at least three tracks, and how you secure a spot is completely different for each.

1. Regular open-air markets — a waiting list, not a bid

The most common form, a permanent pitch at a food market, has no bidding process at all. Here's how it actually works.

  • Register on the market manager's waiting list by mail or email, with your identity and trade details
  • When a pitch opens up, you're summoned — but being summoned doesn't mean you get the pitch
  • Submit a full file (business registration, ID, insurance, a check covering one month's fees)
  • The city approves it, and you receive a subscriber card
  • Renewed every three years (Jan 1–15); producers and organic vendors renew annually
Priority order: registered disabled vendors (when under 6% of the market), producers, sustainable-food vendors, then everyone else. Trade mix, application seniority, existing subscriptions, and attendance/payment history also factor in. 2026 fees run 4.80 EUR (before tax) per linear meter, per day.

2. Park kiosks (kiosques aux jardins) — a real annual call for projects

This one is a genuine call for projects (appel à projets), run on the same cycle every year.

  • Applications: early January through 15 February
  • At the start of the cycle, the city publishes a map of the roughly 40 kiosks up for that year. You pick a location and date, then submit a proposal
  • Results: emailed out starting mid-March
  • Operating season: mid-April through late October
The exact dates shift slightly year to year. What's listed here reflects the 2026 call — confirm the current year's notice on paris.fr before acting on it.

3. Food trucks and event vending — a call for candidates, case by case

Food trucks and event-based vending — a Christmas market, for instance — go through a separate call for candidates (appel à candidatures) per district or per event. The Champs-Élysées Christmas market, for example, ran 22 November 2026 through 4 January 2027, with applications due by noon on 10 August 2026.

How not to miss a call: the city's own listing (paris.fr/occupation-domaine-public) and France-wide public tender aggregators like e-marchespublics.com and francemarches.com — search "Mairie de Paris" — surface active calls. This part really is public information.

Revenue data doesn't exist

To be honest about this: individual vendors' revenue is private information that has never been published, in France or anywhere else. If anyone hands you a figure like "this pitch does X per month," that number was made up, not sourced. The only thing you can legitimately use is a reputation-based proxy — markets like Marché Bastille, Marché des Enfants Rouges, and Marché Président Wilson are consistently described by travel media and locals as "always crowded." That's a foot-traffic and reputation signal, not a revenue figure.

Competitive intel isn't a published dataset either

The city says it "considers trade mix for market balance," but it does not publish specifics like "this market allows N butchers, N cheese vendors." If you want to know how saturated a given trade is at a specific market, there's exactly one way: ask the market manager directly, or visit and count the stalls yourself.

The takeaway

  • Tender dates are partly real. Regular markets run on a waiting list with no bidding at all; park kiosks, food trucks, and event vending have genuine call schedules.
  • Revenue data doesn't exist anywhere. Be skeptical of anyone claiming to have it.
  • Competitive intel is something you check in person. It isn't a published table.
